Octopus & Baked Paprika Marinade
Ingredients
[Serves 4]
70g octopus
2 (240g) yellow paprika
1/4(50g) onion
4(80g) green asparagus
1/2 (4g) garlic
3 tablespoons olive oil
3 tablespoons lemon juice
salt to taste
pepper to taste
4 cherry tomato
Octopus & Baked Paprika Marinade
Directions
1. Slice octopus thinly. Grill paprika until darkened. Cool and peel and remove seed.
2. Cut grilled paprika into 6 pieces. Parboil green asparagus and cut into 2 inches slices. Slice onion thinly. Rinse with water(to reduce onion odor) and pat dry.
3. Place octopus, paprika, asparagus, chopped garlic in a bowl and season with olive oil, lemon juice, salt and pepper. Sprinkle with chopped parsley.
4. Place in platter and serve.
