1) Material Mixture

Mix main materials and side materials evenly and then keep the water content invariable.
Ratio of sawdust to additives: 8:2~7:3
Kinds of additives: rice bran, wheat bran, corncob, BT pulp
Proper water content: 65~70%
2) Filling in bottle

Fill the mixed materials in the bottle, compact, cloze the lid, and make holes.
Amount of material per bottle: 620~650g/850cc(bottle and lid included)
Kinds of bottle :850cc/60~65, 1100cc 70~75, 1200cc 80
3) Sterilizing

Kill various germs mixed with materials and soften the culture fluid.
Sterilization in normal pressure : 98~100 / 4~6 hr
Sterilization in high pressure : 121/1.2kg/cm, 60~90min.
4) Cooling

Cool them to optimal temperature 20~25 quickly.
Keeping clean all the time.
5) Inoculating

Inoculate with spawn in sterile area.
Amount of inoculation: 12~15g/850cc per bottle, inoculate in clean and sterile environment
Kinds of spawn: sawdust spawn, liquid spawn
6) Incubating

Environment
    Temperature : 20~22
    Moisture:65~70%
    Concentration of : 2000~3000 ppm
    Light: dark
Cultivation time : 30~35 days(different due to material mixture)
7) Scratching

Incubation finished, remove the lid and inoculated germs, and then scratch upper substrate layer
Scratching method: Hook scratching, Plain scratching
8) Fruiting body formation

Formation environment
    Temperature : 16~18
    Moisture: 90~95%(early stage), 89~90%(spawn appeared)
    Concentration of : 1000~3000ppm
    Light: 1000~2000Lux
* mushroom appeared after scratching and appearance of spawn
9) Fruiting body cultivation

Cultivation environment
    Temperature: less than 15
    Moisture: 70~90%
    Concentration of : 1000~3000ppm
    Light: less than 100 Lux
* Cultivation time: 16~22day after scratching
10) Harvest

Stem length : 5~10cm
cap diameter : 2~4cm

 
 
 Ingredients: water, ash content, fat, protein, sugar content, vitamin(B,C), mineral(Ca, Mg, K, in, Cu, Fe, Mn), amino acid

In terms of vitamin, most mushroom contain high percentage of the third vitamin but king oyster mushroom contains very little or no vitamin C. And it contains no B1, B2 and Niacin, but much of B6 which can't be found in other kinds of mushrooms. It contains very small amount of B12, which is known as healing pernicious anemia. In terms of vitamin C that helps anti-oxidization, it has 21.4mg/100g, which means 7 times as much as oyster mushroom and 10 times as much as top mushroom. It has comparatively high amount of minerals and it is rich particularly in calcium and iron. Also it is very rich in kalium, as much as 2985mg/kg.
 


 The low water content of king oyster mushroom is useful for long-term storage. It contains high percentage of sugar content and 2 times as much fat as pyogo mushroom.
