Nutrition of Pears Pear Recipes

Pears are good source of inorganic elements (calcium, potassium, magnesium, iron) and vitamins (B1, B2, C, E), and are favorite food of people with their satisfactory taste and scent. These days pears are recognized as functional foods with their functions for healthy diet.

Cultivated pears are classified into south-Asian pear(Korea, Japan), north-Asian pear(China) and western pear. Each has slightly different feature and element.
Pears, which have a long history along with Koreans, are famous alkaline food with 80~82% edibility rate, 85~88% water and 51kcal calories.

Pears are one of the best fruit choices for your daily intake of fiber. A medium sized pear can contain as much as 6 grams of fiber. Fiber can help you feel more full, resulting in an overall decrease in calorie intake, which in turn can help you lose weight faster! Fiber is also beneficial to many other parts of your body including your heart, digestive system and cholesterol levels

Recently, polyphenol and flavonoids in pears are drawing attention from the medical world with their anti-cancer function

  • Sugar
Sugar is an important element in fruits and is especially rich in grape, persimmon and banana.
Pear contains 10~13% of sugar including sucrose, fructose, glucose, sorbitol and small amount of inositol. Sorbitol is a kind of sugar alcohol and is rich in cherry, pear, plum, nectarine and apple. It is 50~60% less sweeter than other sugars, but has different metabolism, thus considered as alternative sugar for diabetics.
Also, 20~50g intake of sorbitol is known to relieve constipation. You can prevent constipation by taking more than 300g of apple or pear that are rich in sorbitol.
Pears contain 15~25mg of sorbitol per 1g.

  • Organic Acid and Vitamins
General organic acid rate of ripe fruits is 0.2~2.0% except for plums(4~5%) and lemons(6~7%)
Organic acid rate of pears is 0.2% and consists of mainly malic acid and citric acid. Organic acid helps relieve fatigue from our body.
Pears contain several kinds of vitamins. Vitamin B1 and B2 strengthen immune system. Vitamin C, which is good for skin, is 3~6mg/100g.

  • Inorganic Elements
Foods are categorized as alkaline and acid. It is advised to keep acidity level neutral by intaking alkaline foods in order to keep health.
Acid and alkaline foods are determined by the amount of inorganic elements contained in the food. If there are more phosphorus(P), sulfur(S), chlorine(Cl) than sodium(Na), potassium(K), calcium(Ca), it?s categorized as acid food.
On the other hand, alkaline foods contain more sodium, potassium, magnesium and calcium than phosphorus, sulfur and chlorine.

Pear is alkaline food with 75% of sodium, calcium, potassium, magnesium and 25% of phosphorus and lactic acid. It helps keep people healthy whose dietary is inclined toward meat by keeping acidity level of blood neutral
  • Amino Acid
Amino acid is rich in fruits such as fig, plum, melon, and nectarine. Pear contains 150mg of amino acid per 100g, which is normal among fruits.
Main amino acid is asparagine, which accounts for 37%, and glutamine, serine, alanine, baline are also included. Pears, with water and asparagine in it, dissolve alcohol in our body and quench our thirst.
  • Dietary Fiber
Pears are loaded with dietary fiber, much of it in the form of Pectin. Dietary fiber contains no calories, and is necessary to a balanced and healthy diet. Fiber helps sustain blood sugar levels and promotes bowel regularity. High fiber diets help reduce risk of colon cancer and can help reduce serum cholesterol.
  • Flavonoid and Polyphenol
Pears contain flavonoid such as quercetin, luteolin and polyphenol such as chlorogenic acid, catechin, apicatechin, arbutin.

Flavonoids have been referred to as "nature's biological response modifiers" because of strong experimental evidence of their inherent ability to modify the body's reaction to allergens, viruses, and carcinogens. They show anti-allergic, anti-inflammatory , anti-microbial and anti-cancer activity. Consumers and food manufacturers have become interested in flavonoids for their medicinal properties, especially their potential role in the prevention of cancers and cardiovascular disease. Quercetin is known especially good for cancer and is contained in pears 20 ~ 45mg per 1kg. Luteolin, which is good for bronchial trouble, phlegm and cough, is contained 2.0~4.5mg per 1kg.

Also, pear peel contains lots of polyphenol which is good for immune system. A research is being conducted to develop a new variety which is edible without peeling
